Jumping right back in

So I had company over for about a month so I wasn't alone through out my husbands deployment and healthy wise that was horrible. I was not making healthy choices for the most part. I would go for a run one day and skip out the next two days. We were all over the city that I had a really hard time to keep up with any gym schedule.
But now Im gonna restart a little. I already did my grocery shopping much healthier. My friend would buy her own things in the grocery store since she said my house was to healthy for her, so now I threw away all the stuff that stayed behind from her. 
Hopefully Ill get my head in the game especially before the holidays but I will say I need to pack my house and move during this month also so this will be a challenge. Im up for it!

Crepes Crepes Crepes!!!!

 
Crepes are easy to make, have less calories than pancakes since its smaller, and the possibilities are endless with varieties.
 I topped this one off with some homemade strawberry compote.
You'll feel nothing but guilt indulging but with whole wheat flour and honey instead of sugar... keep eating on!
 
Ingredients:
 
1 cup whole wheat flour
1 cup almond milk or soy milk
2tbps honey
1/4 tsp salt
1 egg white
1 tsp vanilla extract
Canola oil spray to grease pan
 
Directions:
1. Mix together flour and salt in a medium bowl. In another small bowl mix together milk, honey, vanilla, and egg white. Stir in dry ingredients.
2. Once pan is heated grease pan. Pour about 4 tablespoons into pan and immediately turn the pan in circular motion spreading the batter around.
3. Let stand for about a minute and flip and let cook for about 2 mins.
Repeat until batter runs out.
4. Stuff or top with anything you'd like and enjoy!!!
 
 


Strawberry Compote


 
I thought compote was difficult to make but boy was I wrong!
Compote is not only easy but a great way to add flavor and sweetness to a dish without the crazy sugar lbs many dishes comes with.
I topped this off on some crepes I made with no sugar and was delicious.
 
All I used was a pound of strawberries and about a tablespoon of sugar and a dash of water.
 
Cook on medium high for about 30 minutes. The compote will break down the fruit and become thicker.
Remember to stir with a wooden spoon or rubber spatula. Do not stir in with anything silver. Because your heating sugar the silver will interrupt the temperature and crystallize your sugar.

Crab Salad

 
 
Living across the other side of the country away from my moms cooking sucks.
She barely cooks with fish for multiple reason but the one thing she does do and does well is a crab salad. This salad is bursting with flavor. Taste great cold or warm, and the best part its all mostly made to taste.
I will say the use of oil, vinegar, and pepper will make or break this dish and is all to taste. When adding them to the pot please add slowly till you reach your desired taste.
You can always add but you can never take out from a dish!
 
What you need:
1lbs crab meat
half onion chopped and diced
half of tomato chopped and diced
1 tbsp Spanish olives
about half a cup vinegar (to taste)
about half a cup olive oil (to taste)
about 1 tbsp pepper (to taste)
3 basil leaves
 
1. Chop and dice your onion, and tomato let cook into pot until onion translucent.
2. Add in basil leaves and Spanish olives, then add then crab meat (do not over mix). Let cook down for about 10 mins.
3. Add vinegar, olive oil, and pepper to taste. Cook for about 5 mins and ENJOY!
 
These are Spanish olives. I don't even eat them but its a great way to avoid having to add in salt.
Try not to over mix, crab meat will fall apart.
 


Banana Bread

So Ive been offline for a while. I had no lap top charging cable, and had to wait for a new one to come in the mail. And obviously it has finally arrived!
 
After making the Lemon Yogurt Whole Wheat Bread Ive been interested in making no yeast bread.
Its super easy and making bread from scratch is super yummy. Not to forget its a form of clean eating since you know exactly whats going in your bread and can substitute ingredients.
I made whole wheat banana bread. I used NO SUGAR and NO OIL!
I used applesauce for oil, and honey for sugar. I was stand offish about the applesauce but I had to give it a try.
I promise you the banana bread comes out EXTREMELY moist and DELICIOUS.
 
Makes one loaf.
Ingredients:
 
2 cups Whole Wheat flour
1tsp baking soda
1/4 tsp salt
1/2 cup sugar free applesauce (I used baby food that had around)
3/4 cup honey
2 beaten eggs
3 mashed over ripped bananas
cap full of vanilla extract
1tsp ground cinnamon
 
Direction:
1.Preheat oven 350 degrees. Lightly grease a loaf pan.
2. Combine flour, baking soda, salt, and cinnamon in a large bowl.
3. In a separate bowl combine applesauce, vanilla, beaten eggs, honey, and bananas. Once mixed together slowly combine into dry ingredients.
4. Bake for 60 mins and Enjoy!
 
Tip: When you measure out your honey spray the cup with nonstick spray. The honey will come right out with no stickiness.
 


Climbing Cowles Mountain

 
A friend of mine had spoken to me about her climb at Cowles Mountain and I was interested. Yesterday I give it a go. I was shocked at how high this was. It's 1 1/2miles that looks like 5 with incline, stair master, and treadmill hybrid. There were boulders you had to climb over, steps starting at your knees to get over, and snakes to be on look out for. From the beginning I was having a hard time breathing right. It didn't help I had completely forgotten my in-haler, it was a complete fail on my part. Not even 1/2 up the mile I had to tale brakes to find a good huff in air. My good friend assured me we had no rush and could stop as many times as I needed. So I kept on. Once by 3/4 mile (there are mile marks through the trail) my stomach got upset and I was ready to puke and call it quits. I got dizzy light headed and scared, but yet when I looked over and saw the scenery and how high up I was I wanted to keep going. So I grabbed as much air as I needed and thought to myself 'you have to keep going, you haven't piled yet and if you puke oh well you puked'. I was determined to at least finish the mile. And then the weirdest thing happened.... I was beginning to feel great. I was no longer hugging and puffing for air my breathing was normal, I no longer felt like piling my brains out and suddenly I realized not only has a breeze come in to help breathing but I climbed over my mental wall and now I felt unstoppable... So this is how that feels, to conquer yourself. Buy just when I felt unstoppable the darkness started rolling in and I said oh hell nah! I scared about these snakes coming out, every noise I heard I was paranoid of. So I called it a night and braced myself for the walk down. That was fun -_- I used the flashlight on my phone to see my steps. Almost busted my butt about three different times. And the best part my phone died and I no longer had my own light to see well. What an experience. I'm bummed I wasn't able to finish it especially after I was feeling good but I know I will, I will get to the top. Ill have to get there a little earlier and bring my inhaler ;).
